Fermentation and refinery: The wine ages for several months in large oak barrels followed by a period of bottle-ageing.
Tasting notes: Straw yellow with golden shades. Fascinating nose focused on ripe fruits, yellow peach and papaya with an alluring note of mandarin. It releases graceful aromas of acacia honey and salted caramel. Fuller in body and taste with a fleshy texture and a deep mineral taste which reflects the local terroir.
Serving Suggestions: Enjoy it with mushroom risotto (Porcini in particular) and roasted stuffed turkey.
