Fermentation and refinery: The grapes are hand-harvested and gently pressed. Fermentation occurs in stainless steel tanks at controlled temperatures to preserve the freshness and aromatic profile of the wine. After fermentation, the wine is aged on its lees for several months in large oak barrels. This process helps to impart a creamy texture and adds complexity to the wine while maintaining its fresh and crisp character. The wine is bottled without fining or filtration to preserve its purity and allow it to continue developing naturally in the bottle.
Temperature for serving: 10-12°C.
Tasting notes: Bright, pale golden color, with greenish hues that reflect its youthfulness. Expressive aromas of citrus fruits, such as grapefruit and lime, combined with herbal notes of sage, fennel, and a touch of green pepper. A subtle minerality adds depth and complexity. The wine is medium-bodied with vibrant acidity, offering flavors of ripe citrus fruits, green apple, and hints of tropical fruits.
