Grape variety: 100% Sauvignon Blanc from two different vineyards
Harvesting: By hand.
Fermentation and refinery: De-stemming, soft crushing and immediate cooling to 7°-8°C. Cold maceration for 12 hours. Settling cold for 48 hours, and then transferring. Fermentation and aging in oak barrels of 225 liters for the first 12 months. After this period, assembly of the 2 parts and further refinement of 6 months in steel. It then goes to bottling.
Alcohol: 13.50%
Tasting notes: Straw yellow color. Very elegant nose with citrus notes of grapefruit, hints of elderflower and flint, mint and exotic fruit. Structured, intense, smooth with a good acid tension; with complex and intense varietal sensations and a long aftertaste.
Pairing suggestion: It goes very well with asparagus, vegetable soups, legume purees and marinated fish.
